Knives & Sharpening

Can you teach me how to sharpen my blades?

In UK - yes we can. We are providing workshops from time to time to interested customers and restaurants.

Please subscribe to our newsletter or write to us if You would like to attend one. If your a b2b customer we can provide a special workshop for your chef’s and cooks in UK.

Contact us for more details or check out the page about sharpening service.

Does your knives come pre sharpened?

Yes they are, but for single bevels you should consider honbazuke (first sharpening).

In UK we offer full service whetstone sharpening, repair, and restoration services for your knives. If You are buying a new knife from us just select a option and our master sharpener will make your blade sharp. Please have in mind that initial sharpened knives are non-returnable.

All double bevel knives are sharp so there is no need for initial sharpening (honbazuke).
This is mostly recommended for single bevel as double bevels come pre-sharpened.

Which knife should I choose?

It really depends on your preferences. Choosing the right knife, material (hardness and type of steel), type of blade and its length is very important depending on what tasks and for what purpose you want to use it.

If you are not sure write to us on WhatsApp or email us.

If you want to buy a knife for home use this 18-21cm Gyuto or 16.5cm Santoku should be perfect for you. What kind of steel? If you use it often and are a bit more advanced user - carbon steel will not scare you, otherwise stainless steel (especially Japanese) will be perfect.

A good choice will also be a good petty and usuba knife (if you want to test yourself in carbon steel).

If you are into sushi, your first choice should be a suitable Yanagiba knife.

What is the HRC (Rockwell) hardness scale?

Provides a convenient way to compare the hardness of two materials, such as steel types. The higher the number, the harder the material. German knives usually have a hardness range of 54-58 HRC, and Japanese knives have a hardness range of 59-67 HRC.

It is incorrect to believe that the more “hertz” the better the knife. It all depends on the skill, sharpening tools and purpose.

Is gifting a knife bad luck or will I get cursed?

You will be blessed as it’s a gift for life

But… If you’r a bit superstitious, simply ask the person that you give the gift for a penny or any coin as a payment. You can as well attach one to the gift to make it easy.

Can I buy a knife as a gift?

More than 30% of purchases made in our shop are meant as gifts. A knife is a great life lasting gift.

Depending on the skill of the person you want to give it to you should select a easy to maintain stainless steel knife.

If the person is more advance you can select a carbon steel. A good addition are some sharpening tools like whetstones or just get a gift card to our shop.

Can I wash the knives in the dishwasher?

Short answer: Don’t

It’s your knife, but we strongly advise against it. Thus, you can damage the knife and it is not worth the risk. Just use warm water and towel dry. In conclusion, do not wash the knives in the dishwasher.
